The outline for this class is derived from Julia’s two volume series, Mastering the Art of French Cooking. This classic cookbook sought to make French cooking accessible to everyone and it encouraged you to take the time to cook from scratch. The versatility of chicken as our main ingredient will serve as the perfect canvas for a demonstration of a variety of techniques such as: Butchery, Basic Stock Making, Soups, Sauces, Basics of Meat Cookery & Vegetables. Guests will enjoy savory bites as the class progresses through some of the bullet points of knowledge from this two part book series.

Chef Justin West is the previous chef of Julienne and Wildwood Kitchen. He opened Soul Cal Smokehouse last year in the Santa Barbara Pubic Market.
